A quick recipe for time poor people. The perfect high protein salad.
3 cups of sweet potato, cut in to 2cm cubes and sprinkled with paprika
1/2 head of broccoli
1/2 cup quinoa
1/4 cup nuts, roughly chopped
1/4 cup cranberries or raisins, roughly chopped
100g of goats cheese or feta
1 cup of kale slaw (I get mine from @delishdeliveries, it's way better than the ones you get from the supermarkets)
1. Preheat the oven to 180deg, and put the sweet potato in for about 30min
2. Meanwhile, cook the quinoa according to directions, and steam broccoli. Set both aside to cool
3. Once sweet potato has cooked and cooled a little, add all the ingredients to a bowl and toss evenly.
There’s so much flavour in this salad you won’t even need a dressing. Perfect as a main meal for two people or divided up as a side salad.
